The water soluble protein is:
  1. (A)Myosin
  2. (B)Collagen
  3. (C)Fibrin
  4. (D)Albumin✓ Correct

Answer: (D)

Solution

Fibrous proteins keep their polypeptide chains stretched alongside one another and tied together by hydrogen bonds into fibres, an arrangement that leaves little surface for water to solvate, so they are insoluble; myosin, collagen and fibrin are of this kind and act as structural or contractile material. A globular protein instead coils its chain into a compact ball with the polar side chains turned outwards, and water solvates that polar surface readily. The water soluble protein is albumin.
